Bitter Orange Marmalade

Ingredients
  

  • 1 KG Oranges
  • Sugar to match volume of oranges
  • ½ tsp Citric Acid (optional)
  • ½ tsp Salt (optional)
  • 1 tbsp Brandy or Whiskey per jar (optional)

Method
 

  1. Wash and slice oranges thin
  2. Remove pips and keep in separate jar
  3. Add water to sliced oranges to just cover the oranges
  4. Add water to pips to just cover pips
  5. Leave overnight
  6. Bring oranges (with water) to boil and boil for 45minutes, or until the orange peel is soft
  7. Strain the pips and keep the liquid (pectin)
  8. Measure the amount of cups of cooked oranges (with water) and add cup for cup of sugar
  9. Add citric acid and pectin (from strained pips)
  10. Bring to boil, and slowly boil for about 20 minutes, or until the marmalade sets (testing on sideplate). Usually about 108℃
  11. Remove from heat and bottle warm marmalade
  12. Optional: add a tablespoon of brandy or whiskey on top of each jar of marmalade. (When adding alcohol, the jars should stand for 4-6 weeks before use, so that the alcohol can seep through)
  13. Put lids on (while hot) and let it cool
